Ingredients

  • 2 slices whole grain bread
  • 1 large avocado ripe
  • 1/4 cup kimchi roughly chopped
  • 1-2 soft boiled eggs
  • sesame seeds for garnishing
  • salt and pepper to taste
  • 1 tbsp lemon juice
  • micro greens (optional) for garnish

Instructions

  • Begin by toasting the bread slices until they achieve a golden brown color.

  • Cut the avocado in half, carefully remove the pit, and scoop out the flesh into a bowl. Using a fork, mash the avocado until smooth and season with salt, lemon juice and pepper to your taste.

  • Spread the mashed avocado evenly onto each slice of toast, ensuring complete coverage.
  • On both slices of toast, spoon the chopped kimchi generously, ensuring a harmonious distribution.

  • Mash soft boiled eggs in a bowl until they are chunky but crumbled and gently place it on top of the toast, allowing it to nestle perfectly.
