Expert Tips
Keep pesto vivid: Add a few basil stems and a small ice cube to the blender to lock in bright green color.
Prevent bitter pesto: Blend just until smooth; overprocessing can make olive oil taste harsh.
Chunky vs. smooth: For more texture, pulse in short bursts; for silky, let it run longer.
Greener flavor: Briefly blanch basil (5–10 sec) and chill in ice water before blending to reduce bitterness.
Better under-skin coverage: Lift skin with a spoon handle to avoid tearing and spread pesto evenly.
Crispier skin while resting: Rest cooked thighs on a wire rack, not a plate, so steam doesn’t soften the skin.
Thermometer accuracy: Insert the probe horizontally, avoiding bone, for a true reading.
