- 1-2 small cucumbers peeled and sliced
- 1 cup lemon juice freshly squeezed (about 4-6 lemons)

- 4 cups cold water

Instructions
- In a blender or food processor, blend the cucumber slices until smooth. You may need to do this in batches depending on the size of your blender. Add 1/2-1 cup of the cold water to help it blend if needed.1-2 small cucumbers
- Place a fine-mesh strainer over a pitcher. Pour the cucumber puree into the strainer and use a spoon to gently press down and extract as much juice as possible. Discard the pulp or save it for other recipes.
