- 1-2 small cucumbers peeled and sliced
- 1 cup lemon juice freshly squeezed (about 4-6 lemons)
- 1/2 cup agave syrup (adjust to taste)
- 4 cups cold water
- ice cubes
- fresh mint leaves (for garnish, optional)
- lemon or cucumber slices (for garnish, optional)
In a blender or food processor, blend the cucumber slices until smooth. You may need to do this in batches depending on the size of your blender. Add 1/2-1 cup of the cold water to help it blend if needed.
1-2 small cucumbers
Place a fine-mesh strainer over a pitcher. Pour the cucumber puree into the strainer and use a spoon to gently press down and extract as much juice as possible. Discard the pulp or save it for other recipes.
In the pitcher, add the freshly squeezed lemon juice and agave syrup. Stir well to combine.
1 cup lemon juice, 1/2 cup agave syrup
Add cold water to the cucumber-lemon mixture and stir to blend thoroughly. Taste and adjust the sweetness by adding more agave (or sweetener of choice) if desired.
4 cups cold water
Refrigerate the cucumber lemonade for at least 1 hour to allow the flavors to meld and the drink to chill.
Fill glasses with ice cubes. Pour the chilled cucumber lemonade over the ice.
Optionally, garnish each glass with a sprig of fresh mint and a slice of lemon or cucumber. Serve the cucumber lemonade immediately and enjoy its refreshing and revitalizing taste!
fresh mint leaves, lemon or cucumber slices
A smoothie blender works great for blending the cucumbers completely leaving you with minimal to no pulp. Its a good option if you have one.
If you prefer a smoother texture, you can strain the cucumber juice through a fine-mesh strainer once more before mixing it with the lemon juice and agave.
Adjust the amount of agave syrup based on your personal taste preference. You can start with 1/4 cup and gradually add more until the desired level of sweetness is achieved.
For an extra twist, you can add a splash of sparkling water to each glass just before serving for a fizzy cucumber lemonade.
Feel free to get creative with your garnishes. Slices of cucumber or lemon wheels can also be used to decorate the glasses.
