- 1/4 cup extra virgin olive oil
- 1/4-1/2 cup lemon juice, freshly squeezed
- 1 cup fresh mint, finely chopped
- 1 cup fresh parsley, finely chopped
- 2 cloves garlic, minced
- 2 cups spring mix
- 1/4 tsp red pepper flakes (optional)
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 salad cucumbers, diced
- 1 pint cherry tomatoes, halved
In a small bowl mix together the olive oil, lemon juice, mint, parsley, garlic, red pepper flakes, and salt and pepper. Allow the mixture to sit for at least 30 minutes in the fridge before using or overnight.
For the salad combine the remaining ingredients in a large bowl. When you are ready to serve add in the dressing and toss. Serve and enjoy.
