Stir in the lime zest and lime juice. Taste and adjust with more salt, lime juice, or smoked paprika if needed.

Sprinkle the shredded cheddar evenly over the beef mixture. Cover the skillet for 2 to 3 minutes, or place it under the broiler briefly, until the cheese is melted.
