- 1 cup blackberries rinsed
- 1 lb tomatillos husked and rinsed
- juice of 1 fresh lime
- salt and pepper to taste
- 1/4 cup white onion finely chopped
- 1 bunch fresh cilantro finely chopped, put some aside for garnishing
- 1 jalapeno
- 1 tsp honey (optional)
Place tomatillos on a large pan and put it in the oven. Broil them on high until they begin to slightly brown, about 5-15 minutes. Keep an eye on them so they do not burn. Remove from oven and allow to cool.
In a food processor or blender, combine the blackberries and tomatillos. Pulse until desired consistency is reached.
Add the rest of the ingredients and pulse until desired consistency is reached.
Taste the salsa and adjust the seasoning as needed. If desired, add honey for a touch of sweetness.
Allow the salsa to sit for at least 15 minutes in the fridge to let the flavors meld together.
Serve the blackberry tomatillo salsa with tortilla chips, as a topping for grilled meats, or as a flavorful addition to your favorite dishes.
