Ingredients

  • 4 slices crusty sourdough bread
  • 4 oz brie cheese
  • 1/4 cup fig jam
  • 4-6 slices prosciutto
  • 1/4 cup roasted red peppers
  • arugula leaves
  • 1-2 tbsp ghee or butter (I find ghee to work better since it does not burn as easily)

Instructions

  • Slice the Brie cheese into thin slices. Spread fig jam evenly on one side of each slice of sourdough bread. Lay prosciutto slices on top of the fig jam on two of the bread slices. Distribute the roasted red pepper slices on top of the prosciutto. Place a handful of arugula leaves on top of the roasted red peppers. Place the Brie cheese slices on top of the arugula leaves. Close the sandwiches by placing the remaining slices of bread, fig jam side down, on top of the Brie.
    4 slices crusty sourdough bread, 4 oz brie cheese, 1/4 cup fig jam, 4-6 slices prosciutto, 1/4 cup roasted red peppers, arugula leaves
  • Heat a skillet or griddle over medium heat and add in your half your ghee or butter and allow to melt and spread across the pan. Place the sandwiches on the heated skillet or griddle. Cook for about 2-3 minutes on each side (adding more ghee or butter to the pan as needed) or until the bread turns golden brown and the cheese is melted.

  • Once the sandwiches are grilled to perfection, remove them from the heat. Allow them to cool for a moment before slicing them in half straight down the middle or diagonally.
  • Serve your Brie, Roasted Red Pepper, Prosciutto, Fig Jam, and Arugula Grilled Cheese Sandwiches warm and enjoy!

Notes

Arugula Placement: When placing the arugula, try to keep it closer to the center of the sandwich. This prevents it from wilting too much during grilling, maintaining its fresh crunch and flavor.
