Ingredients

  • 1 lb lean ground turkey
  • 4 cups jasmine rice cooked and cooled
  • 3 large eggs
  • 2 cups purple cabbage thinly sliced
  • 1 cup edamame shelled
  • 1 cup carrots shredded
  • 1 bell pepper thinly sliced
  • 4 green onions sliced
  • 1 small yellow onion diced
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 3 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp sriracha optional
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • pinch of salt
  • 1/4 tsp black pepper
  • 1 tbsp avocado oil
  • lime wedges, extra green onion, cilantro, sesame seeds optional for serving

Instructions

  • Heat a large skillet or wok over medium-high heat. Add the avocado oil.

  • Add the ground turkey along with the smoked paprika, garlic powder, onion powder, black pepper, and a pinch of salt. Cook for 6 to 8 minutes, breaking it apart as it browns.

  • Add the diced onion, bell pepper, carrots, and purple cabbage. Cook for 4 to 5 minutes until the vegetables soften slightly but still keep some texture.

  • Stir in the garlic and ginger and cook for 30 seconds until fragrant.

  • Push everything to one side of the pan. Crack the eggs into the empty side and scramble until cooked.

  • Add the rice and edamame. Break up the rice and stir everything together.

  • Pour in the soy sauce, rice vinegar, sesame oil, and sriracha. Stir fry for another 3 to 5 minutes until hot and slightly crispy in spots.

  • Stir in most of the green onions and save some for serving on top.

Notes

  • Best Rice Texture: Use completely chilled, previously cooked jasmine rice.
  • Keep It Moving: Stir frequently once the rice and sauce are added.
  • Control the Heat: Add sriracha to taste or leave it out.
  • Avoid Crowding: Use your largest skillet or wok for better browning.
  • Prep Ahead: Chop the vegetables before turning on the stove.
