- 1 lb lean ground turkey
- 4 cups jasmine rice cooked and cooled
- 3 large eggs
- 2 cups purple cabbage thinly sliced
- 1 cup edamame shelled
- 1 cup carrots shredded
- 1 bell pepper thinly sliced
- 4 green onions sliced
- 1 small yellow onion diced
- 4 cloves garlic minced
- 1 tbsp fresh ginger grated
- 3 tbsp low sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tbsp sriracha optional
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- pinch of salt
- 1/4 tsp black pepper
- 1 tbsp avocado oil
- lime wedges, extra green onion, cilantro, sesame seeds optional for serving
Heat a large skillet or wok over medium-high heat. Add the avocado oil.

Add the ground turkey along with the smoked paprika, garlic powder, onion powder, black pepper, and a pinch of salt. Cook for 6 to 8 minutes, breaking it apart as it browns.

Add the diced onion, bell pepper, carrots, and purple cabbage. Cook for 4 to 5 minutes until the vegetables soften slightly but still keep some texture.

Stir in the garlic and ginger and cook for 30 seconds until fragrant.

Push everything to one side of the pan. Crack the eggs into the empty side and scramble until cooked.

Add the rice and edamame. Break up the rice and stir everything together.

Pour in the soy sauce, rice vinegar, sesame oil, and sriracha. Stir fry for another 3 to 5 minutes until hot and slightly crispy in spots.

Stir in most of the green onions and save some for serving on top.

Finish with a squeeze of lime if desired.
