Heirloom Tomato and Cucumber Salad

Ingredients

  • 3 large heirloom tomatoes sliced
  • 2 Japanese cucumbers thinly sliced
  • 1 orange juiced
  • 1 lemon juiced
  • 1/4 cup fresh dill minced
  • 1/4 cup fresh mint minced
  • 1 tbsp extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Slice the heirloom tomatoes into thick rounds and thinly slice the Japanese cucumbers. Place them in a large salad bowl.

  • Squeeze the juice of one orange and one lemon over the tomatoes and cucumbers.

  • Sprinkle the olive oil, chopped dill and mint over the salad. Season with salt and pepper to taste.

  • Gently toss the salad to combine all the ingredients. Serve immediately as a refreshing side dish!
