- 2 tbsp olive oil
- 1 medium onion diced
- 3 garlic cloves minced
- 1 bell pepper (any color), diced
- 1 (15 oz) can of diced tomatoes
- 1 (15 oz) can of black beans rinsed and drained
- 1 (15 oz) can of kidney beans rinsed and drained
- 1 1/2 cups cooked turkey shredded or cubed
- 2 cups turkey or chicken broth
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- salt and pepper to taste
- sour cream, shredded cheese, cilantro, avocado, or crushed tortilla chips (optional toppings)
Heat olive oil in a large pot over medium heat. Add onion and bell pepper, cooking for 5 minutes until softened. Stir in garlic and cook for another minute.
