Ingredients

  • 4 medium-sized beets washed and trimmed
  • 1/4 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp honey (optional)
  • salt and pepper to taste
  • fresh herbs (such as thyme or rosemary) chopped (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until the beets are tender when pierced with a fork.

  • Once the beets are cooked, allow them to cool slightly. Then, using a paper towel or your fingers, gently rub off the skins. Cut the beets into slices or cubes, depending on your preference.
  • In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, honey (if using), salt, pepper, and chopped fresh herbs (if using). Adjust the seasoning to taste.

  • Once marinated, the beets are ready to be used in salads, sandwiches, or as a flavorful side dish. Enjoy!
