- 2 tbsp fresh oregano leaves
- 1 tsp salt (adjust to taste)
- 1/2 tsp freshly ground black pepper
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
Preheat your oven to 400°F (200°C).
On a baking sheet lined with parchment paper (if not nonstick), place the cherry tomatoes, garlic cloves, and quartered shallots.
