Ingredients

Sausage Patty

  • 1 lb ground pork
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (adjust to taste for spice)
  • Salt and black pepper to taste
  • 1 tbsp avocado or olive oil (for cooking)

Avocado Spread

  • 1 ripe avocado
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Scrambled Eggs with Chives

  • 4 eggs
  • 1-2 tbsp chives chopped (fresh or dried is fine)
  • Salt and pepper to taste
  • 1-2 tbsp unsalted butter for cooking

Other Toppings

  • Hot sauce of your choice
  • Sprouts of your choice
  • pickled onions
  • English muffins or your preferred breakfast buns

Instructions

Sausage Patties

  • In a bowl, combine ground pork, sage, thyme, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until the spices are evenly distributed throughout the meat.

  • Shape the mixture into patties that fit your breakfast buns.
  • Heat olive oil in a skillet over medium heat. Cook the sausage patties for 4-5 minutes per side or until fully cooked and browned.

Avocado Spread

  • Mash the ripe avocado in a bowl.

  • Add lime juice, salt, and pepper. Mix until smooth and well combined.

Scrambled Eggs with Chives

  • Whisk together eggs, chopped chives, salt, and pepper in a bowl.

  • Heat butter in a pan over medium-low heat. Pour in the egg mixture and scramble until the eggs are cooked to your liking.

Assembling the Breakfast Sandwich

  • Toast the English muffins or breakfast buns.
  • Spread a layer of avocado spread on the bottom half of each bun.
  • Place a homemade sausage patty on top of the avocado spread. Spoon the scrambled eggs with chives over the sausage patty.
  • Add a generous amount of pickled onions on top. Drizzle hot sauce over the eggs. Add a handful of sprouts on top.
