Sausage Patty
- 1 lb ground pork
- 1 tsp sage

- 1 tsp paprika
- 1/2 tsp garlic powder

- 1 tbsp avocado or olive oil (for cooking)
Avocado Spread
- 1 ripe avocado
- 1 tbsp fresh lime juice
- Salt and pepper to taste
Scrambled Eggs with Chives
- 4 eggs
- 1-2 tbsp chives chopped (fresh or dried is fine)
- Salt and pepper to taste
- 1-2 tbsp unsalted butter for cooking
Other Toppings
- Hot sauce of your choice
- Sprouts of your choice
- pickled onions
- English muffins or your preferred breakfast buns
Sausage Patties
In a bowl, combine ground pork, sage, thyme, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until the spices are evenly distributed throughout the meat.

Shape the mixture into patties that fit your breakfast buns.
Heat olive oil in a skillet over medium heat. Cook the sausage patties for 4-5 minutes per side or until fully cooked and browned.

Avocado Spread
Mash the ripe avocado in a bowl.

Add lime juice, salt, and pepper. Mix until smooth and well combined.

Whisk together eggs, chopped chives, salt, and pepper in a bowl.

Heat butter in a pan over medium-low heat. Pour in the egg mixture and scramble until the eggs are cooked to your liking.

Assembling the Breakfast Sandwich
Toast the English muffins or breakfast buns.
Spread a layer of avocado spread on the bottom half of each bun.
Place a homemade sausage patty on top of the avocado spread. Spoon the scrambled eggs with chives over the sausage patty.
Add a generous amount of pickled onions on top. Drizzle hot sauce over the eggs. Add a handful of sprouts on top.
Place the other half of the bun on top to complete the sandwich.
