- 1 cup cashews soaked overnight or for at least 4 hours
- 1/2 cup water
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1-2 garlic cloves (optional)
Drain and rinse the soaked cashews.
Add the cashews, water, lemon juice, and salt(and garlic, if using) to a blender or food processor.
Blend on high speed for 1-2 minutes, or until the mixture is smooth and creamy.
Adjust the consistency by adding more water, 1 tablespoon at a time, if needed.
Use immediately, or store in an airtight container in the refrigerator for up to 5 days.
