- 8 ox Brie cheese (about 225g) rind removed
- 1/4 cup heavy cream
- 2 tbsp honey (plus extra for drizzling)
- 1/4 cup walnuts chopped, toasted
- Crackers or baguette slices for serving
- Fresh thyme leaves for garnish (optional)
Cut the Brie cheese into small cubes, removing the rind.

In a food processor, combine the Brie cubes and heavy cream. Process until the mixture becomes smooth and fluffy.

Add 2 tablespoons of honey to the whipped Brie and continue to process until well combined.

In a dry skillet over medium heat, toast the chopped walnuts until they become fragrant and lightly browned. Stir frequently to prevent burning.

Gently toss the toasted walnuts onto the whipped Brie mixture.
Transfer the whipped Brie to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up slightly.
Just before serving, drizzle a bit of honey over the top of the whipped Brie. Garnish with fresh thyme leaves if desired.

Serve the whipped Brie with crackers or slices of baguette. It's perfect for spreading on bread or crackers and makes for an elegant and delicious appetizer.
