Ingredients

  • 8 ox Brie cheese (about 225g) rind removed
  • 1/4 cup heavy cream
  • 2 tbsp honey (plus extra for drizzling)
  • 1/4 cup walnuts chopped, toasted
  • Crackers or baguette slices for serving
  • Fresh thyme leaves for garnish (optional)

Instructions

  • Cut the Brie cheese into small cubes, removing the rind.

  • In a food processor, combine the Brie cubes and heavy cream. Process until the mixture becomes smooth and fluffy.

  • Add 2 tablespoons of honey to the whipped Brie and continue to process until well combined.

  • In a dry skillet over medium heat, toast the chopped walnuts until they become fragrant and lightly browned. Stir frequently to prevent burning.

  • Gently toss the toasted walnuts onto the whipped Brie mixture.
  • Transfer the whipped Brie to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the mixture to firm up slightly.
  • Just before serving, drizzle a bit of honey over the top of the whipped Brie. Garnish with fresh thyme leaves if desired.
