- 4 medium-sized zucchinis sliced
- 4 cloves garlic roughly chopped
- 3 tbsp tahini
- 4 tbsp lemon juice
- 3 tbsp olive oil
- 1 tsp ground cumin
- Salt and black pepper to taste
- 2 tbsp Greek yogurt or plant-based yogurt (optional, for creaminess)
- 2 tbsp fresh dill finely chopped, save some for garnishing
- 1/4 cup pine nuts toasted
- 1/2 cup feta cheese crumbled

Preheat your grill or grill pan.
Lightly brush zucchini slices with olive oil and grill them until they have grill marks and are tender (3-4 minutes per side).

Allow the grilled zucchini to cool for a few minutes. Chop the grilled zucchini into smaller pieces.
In a food processor, combine the grilled zucchini, minced garlic, dill, tahini, lemon juice, olive oil, yogurt if you are using it, cumin, salt, and black pepper. Blend until smooth.

Taste the Zucchini Baba Ganoush and adjust the seasoning according to your preference. Add more salt, pepper, or lemon juice if needed.
Fold in toasted pine nuts for a delightful crunch.

Transfer the Zucchini Baba Ganoush to a serving bowl. Sprinkle crumbled feta cheese on top. Drizzle with a bit of olive oil and sprinkle with fresh chopped dill.
